I too have been thinking about making Beautyberry wine. I went to a plant swap down in St, Cloud, Florida over the weekend and one of the participants made Beautyberry Jelly and brought it to the event. Omg! it was delicious. The berries when raw don't have much flavor but she cooked them for 2 hours on the stove and then strained them and added the sugar and pectin and they became that divine jelly. I have a juice extractor and was thinking of either extracting the juice and adding it to water and then cooking it for a bit prior to adding the cooled off juice to the carboy and combining the sugar and yeast with it. I am not fond of tart wines. I also thought of just cooking the whole berries and then cooling them down and adding the water and yeast and campden tablet to the mix in the carboy and just let it ferment.. What do you all think about these ideas?
