Dede Welcome! it is a beautiful bloom but I'm not good in identifying varieties.

I would wait in spring to cut. Where to cut the Branches would be your preference. If I have 4 branches on top, I prefer to cut it as multi-tip cutting go an instant tree effect. And per my experience, multi-tip mature cuttings has higher chance of blooming within a year or 2.
