He also told me to Google roasting spices and blooming spices because both of these processes enhance the flavor of the spices ...
About the curry:
AFTER, Gene had sent the packages of spice blends, I told him in a t-mail that I really didn't like curry. He told me there were different kinds of curries .. something which I did not know ... and kind of indicated that I might be surprised. When the package arrived, one of the blends was "Cambodian Lemongrass Curry". In a sense, I felt obligated to try that one first because I didn't want to shut Gene down and I wanted him to know I was willing to experiment.

I tried it using scrambled eggs with no veggy additions and another time with one of my veggy combinations. I liked it both times. I still have to get used to it, but it is not something I would put in the back of the cupboard and never try again.
