I made an Italian inspired penne pasta casserole with sausage, onion, garlic, red and green peppers, zucchini, spinach, canned tomatoes, oregano, basil, rosemary, chili flakes, with 3 cheeses. Served with a green salad. It was nice and light tasting because of all the veggies, thankfully DH said he would eat it again, because of course I have lots for another meal.
