I grow Gypsy every year and they are yellow for quite awhile before they turn red, but very good at that stage as well. None of my seeds germinated this year so unless my friend started some, I'll be without them. Trying a new sweet pepper, Napolean. Best eaten green, so they say. We shall see.

I usually start my peppers mid Jan. so they have time to get nice sized before planting out but this year I didn't get them planted until mid Feb. and then many didn't germinate so I had to replant. The Napoleans came up in less than a weeks time. I plant them out end of April but if it's still cool, they just sit there.

I use Wall-O-Water and they can really give you a head start but you have to knock them over to drain the water before removing, and do it before the plant gets too big.

I am trying celery again this year but again, I got it planted later than I wanted. But we'll see. I may try a fall planting if I remember too. It seems to like cooler weather.
