But you are correct.. an aged balsamic has no rival
My fav is Cavalli . Aged in many different woods
I get it at a specialty shop called Southern Season but can find on the net. So good you can sip it like wine.. It is $37 a bottle but a little bit goes a long way. On a salad warmed with a little honey with greens and apples it is great.
My DH one year bought me an 8 oz tiny thing of balsamic ..$100 ... a Christmas gift. I never tasted it, I made him take it back. I told him at that price...I would dab it behind my ears and smell like an Italian sub before I would ingest it!
Seriously, once I discovered balsamics a new world opened ...I am glad you went to that shop. Now you can try different oils and vinegars and tell us about them.
