Chocolate balsamic is GREAT on strawberry. You can find that in those shops.
Basil infused oil stunning

But you are correct.. an aged balsamic has no rival
My fav is Cavalli . Aged in many different woods
I get it at a specialty shop called Southern Season but can find on the net. So good you can sip it like wine.. It is $37 a bottle but a little bit goes a long way. On a salad warmed with a little honey with greens and apples it is great.

My DH one year bought me an 8 oz tiny thing of balsamic ..$100 ... a Christmas gift. I never tasted it, I made him take it back. I told him at that price...I would dab it behind my ears and smell like an Italian sub before I would ingest it! Rolling on the floor laughing Rolling on the floor laughing Rolling on the floor laughing Seriously, once I discovered balsamics a new world opened ...I am glad you went to that shop. Now you can try different oils and vinegars and tell us about them.
