Light rain here, expected to end in the next hour...this is good, just enough to water a bit and make me stay inside and cook...
Dinner....
Couple of chicken breasts, cut into 'tenders' and then halved or so...marinated in 1/4 c olive oil with one pkg Onion Soup Mix, several T minced garlic..
Spread out in roasting pan....
halved Brussels Sprouts
carrots, cut into sticks
zucchini, cut into sticks
onions (Sweet), cut into maybe quarters
sliced shrooms
maybe asparagus, green beans, whatever
mix in 1/4 c olive oil
add chicken pieces on top of veggies, mix to coat all well with the oil, soup, garlic mix, with chicken pieces ending up back on top...salt.....
Oven 400 for 30 minutes.....broil about 1 minute to brown up edges just a tad.
