Finally stopped by Trader Joe's on our way back from the rehab place, so I have my vodka marinara sauce... absolutely the best and easiest way I've found to cook eggplant, just simmer chunks of it together with onion, summer squash, zucchini, and toss in chicken if you want. I'm making bowtie pasta and tossing it with everything else so it's easy to store leftovers for my lunch (I'll be trying to fatten up Mom & Dad nextx week without doing the same to myself LOL).
