This is a Phalaenopsis Orchid. Sappy stuff is just that, a nectar of sweet sugary juice that the plant makes normally.
You have choices when it comes to the bloom spikes as most growers cut them back when it is done blooming. Cut as close to base as you can safely without damaging plant.
If you cut the spike back to just an inch above a 'node', the spike will re-flower. There is a slight danger in re-blooming Phalaenopsis on the same spike in that energy will be directed towards pleasing us with more flowers when it should using that energy to perhaps make new leaves to add to the overall health of the plant.
Culture is typically no direct sun, otherwise bright. Never let them dry out and fertilize monthly. Most growers re-pot every one or two years depending upon growing media.
