Winter rest has usually been a combination of less water, cooler temps and less light.
The cooler temperatures are almost automatic as is less light. The thing you can control is less water. I water my Dendrobiums about every fourth sunny day here in 'south Irma country'
and then I cut it back to about once a week or even ten days during the cooler months. However our last several winters have been atypically warmer so once a week is probably accurate.
I use a #3 pencil on my tags. I use those broad plastic tags with the four columns on the back side. When they flower I note the month, year, number of flowers and spikes in those four columns. I also periodically look at each and every plant on a yearly basis and touch up any faded letters on the plastic tag with the pencil.
As far as cold goes, the nigro-hirsute varieties like it a bit cooler. Those I keep at the North end of my lanai to take advantage of northerly breezes during the cooler months, plus I use a fan almost year round and have things like Dendrobium Angel Frost and Dendrobium Lori's Star closer to the fans. Fans help to cool things down.
