My brother arrived unexpectedly..I am in Florida helping sis with her knee surgery... challenges >> brother has celiac dz, and so must be gluten free.
Brother in law is a spoiled nut .. a pain in the tush...nothing green..no veggies in food, nothing on bone, grrrrr. He "eats sliced (if thin) ham, turkey, bologna, cheese. BUT NOT ON A SANDWICH TOGETHER ..,of course I made him a sub..mixed meat,. The kind of Meat he eats! Would not eat..ham was touching the turkey.. a sub should have ONE of the meat or chees choices..., AND No tomato! And NO LETTUCE.. Ugh. Yet, HE EATS HOT DOGS..FROZEN SALISBURY STEAK BY THE POUND... ugh...
Anyway, he went out.. while he was gone..., I bought chopped meat..ground pork, mushrooms green pepper, omions, garlic ..made quick saute of the veggies and garlic. Cooled..PUREED IT...added to the meat..plus eggs, grated fresh parm...no bread or crumbs ( gluten free need for my brother ) so skinned red potatoes..sliced really thin fried those in butter..salted it.. mashed it up added to meat loaf to bind it. Formed the loaf..covered lightly with coarse Himalayan sea salt Baked the damn thing ..it was good!! ..all went back for seconds/ thirds. Even picky man who only ' saw' browned meat because he "dont eat mushrooms, onions, peppers " (pureeing works ) .. fixed a green salad of chopped romaine hearts, baby greens and kiwi and turkish pistachios - balsamic dressing. ..canned corn with butter, and baby sweets (yams) roasted and mashed with butter, cream, cinnamon, honey. He ate that..(not the salad..of course ) he gobbled that canned corn. Brother ate all- gratefully.
