#2 is a Prickly Pear cactus, which grows all across a majority of your wonderful state, as well as quite a few others. Prickly Pears (Opuntia)
#3 would be a Texas Sage, which actually is not a true sage. It is also commonly known as Purple Sage or Texas Ranger. It responds quite well to drier and warmer areas, which is why it is commonly found in Texas and the Southwest. Texas Sage (Leucophyllum frutescens)
