Boneless pork loin roast on sale for $1.49. I got 5 lbs. One nice feature of the Instant Pot is the sauté button/function. Can save getting another pan dirty. I'm using spices that are seeds. You need to roast and bloom the seeds before using them as spices. Panch Phoran (a 5 seed mix from Bangladesh.) Added some Dukkah which is an Egyptian spice blend containing seeds. Push the sauté button and it automatically is on normal heat. Something I did not notice before. The adjust button can give you more or less heat for the sauté. Normal is fine here. Throw in some oil, wait for the heat, add the spices/seeds. They must pop open to spread their flavor. You will hear, see and smell them doing this. Do not let them burn. Now add the meat. No salt! Sear on all sides, off, manual high pressure, 90 min. Biggest problem you will have is getting it out of the pot as it is falling apart. I cannot describe how delicious this pork is. Possibly best pork ever. Probably a taste you have never encountered before. As usual send me a tree mail and I can send you some samples of these 2 spices. Also one of the best spices for roast potatoes I have found. Gene
