I tried a new recipe tonight, a sheet pan dinner. LOVED IT!

Roasted salmon with veggies

salmon filet, cut into portions

1onion, sliced
1 sweet red pepper, chopped into large chunks
1 can garbanzo beans, drained, rinsed, dried
1 zucchini, sliced

Mix spices
1.5 tsp smoked paprika
1 tsp coriander
1 tsp cumin
1 tsp kosher salt
3/4 tsp black pepper

EVOO
fresh mint leaves for garnish

Cut zucchini, peppers, onion, and mix with garbanzo beans. Toss with EVOO and most of the spice mix on a sheet pan. Season the salmon with the rest of the spice mix. Roast veggies @ 450 degrees for 20 minutes. Remove from oven, stir veggies, and nestle salmon portions in veggies, directly in contact with pan. Roast another 10 minutes to cook salmon. When plating, garnish with fresh mint.

Excellent! and I think it would work well with any dense fish, or chicken or pork chops...

We had it with Reisling.
