The chili my Dad makes has become our go-to camping meal. Quick & easy (even more so if you cook up the ground beef & onions ahead of time), and it sure hit the spot on a cool spring night in the mountains this past Saturday! After cooking the beef, it only needs to simmer 15 minutes or so to flavor through.

basic quantities (multiply as needed)

1 pound lean ground beef
1 large onion, diced
1 can beans (dark red kidney beans and/or small red beans)
1 can crushed or diced tomatoes
1 can Campbell's condensed tomato soup
3/4 can water
1 Tablespoon + chili powder (we're stuck on Penzey's Chili 2000)
Tabasco to taste, after serving

shredded cheese, sour cream, corn, cooked macaroni -- or not, it's all good
