Sean..
That sounds great!

@mccash70
Yes, but it is so simple it is embarassing.
And here it is. Be aware if you blend it with an emersion blender or however you blend or cream things....it makes a great "creamed" soup without the cream! If you add butter it is sinfully good!
This is a lower cal version ( and less $)

Two boxes of BEEF broth ( or cans or make your own ) ( 64 oz)
A LARGE onion ( chopped ..I use sweet but any will do )
10 decent cloves garlic ( chopped ) ( Dont reduce the number Margaret)
A BIG bag of broccoli 1.5 pounds at least .3 big heads?? If not bagged .I buy at Costco or BJs..its the tops not the stalks . But if you buy a whole head..peel tough stalk and use it all!
Olive oil .the lighter kind not the darker green
FRESH shredded parm about two cups ( cold section of supermarket )
Teaspoon Coarse salt ( do you have hickory or Alderwood or any smoked salt ?? This is just for flavor because the broth has sodium. If you are low sodium diet..buy low sodium broth and still use this teaspoon smoked salt for a bit of flavor
Black pepper..a shake shake shake
1/2 pound of pasta

Instructions..
In your large soup pot sauté the onions and garlic in oil ( 1/8 cup?? Oil.). (Enough to barely cover the pan ) until limp
Add all the broccoli.
Add all the cheese and the broth
Simmer.... simmer......until broccoli very done ( like it wants to fall apart ) and the liquid level is where you want...is it a soup..leave more liquid or do you want to mix pasta as a pasta dish ( not soupy) If yes cook it down a bit more and add that butter! YUM!
Done!

If adding pasta.. buy a small design .. i choose small shells or ditali.. cook pasta in separate pot ..until just done ..( almdente) not soggy..a bit of tough resistance..drain WELL.. add to mix and salt and fresh cheese as desired

Now if you like it spicy..you can add whatever heat you want..red peoper flakes? We do not eat spicy ( "we" as in dear hubby ) and so I dont

Next day..hot fry in bit of butter or oil.. let it sit on pan before flipping.. let it ' burn' a bit ( the cheese is really what is burning ..great when parmeasan browned )
Enjoy.
Margaret..you will make this over and over..
Great tossed with shrimp too
It takes 10 minutes from your day and no big kitchen mess
Don't squat with yer spurs on!

People try to turn back their "odometers." Not me. I want people to know 'why' I look this way. I've traveled a long way and some of the roads weren't paved
