ZUCCINI BREAD
This is one of my favorite recipe's from my Mom. It is best warm out of the oven with a couple of pats of butter on the slice of bread.
3 eggs
1 cup vegetable oil
2 cups sugar
2 tsp vanilla
1 cup chopped walnuts
3 cups flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
3 tsp cinnamon
3 cups grated zuccini
Beat eggs until light and foamy.
Add oil, sugar, vanilla, and zuccini and blend well.
Mix in flour, soda, baking powder, salt and cinnamon.
Add nuts last
Bake in 2 loaf pans at 325 for 1hr and 20 mins
