Cheese tastes better at room temperature. Means you can eat less and enjoy more. I live in WI. At any one time I probably have 4 to 5 kinds of cheese in my ref. Company coming over for some cheese and wine? Get both out ahead of time.

On a different cheese note. Do you love how aged cheddar cheeses crumble?
Buy some good sharp cheddar and store it in your freezer.
I am not sure, a month or two?
Thaw it. It will crumble and taste like some way more expensive aged cheddar.
