It's been a minute since I checked in, LOL, and of all days, too! Guess what I'm having for lunch? EGGPLANT, that I put in the freezer on 11/17!
I made my Spicy Asian Eggplant recipe this weekend, and portioned it out. Good as the day I picked it, too!
It was the Gretel variety, long, slender and white.
I'll be starting seeds again, this weekend, for plant out in about 8 weeks. I think I can get them up and running in a hurry, and to a good size in that time. Once they're in, they should take off fairly quickly. At least, that's the plan, LOL! We;ll have enough heat to get 'em going, then, they'll grow into the cool of the fall. They like that, here!
