Picked 4 of my summer squash this past week.

Today I Used them. Made cream of squash soup. Make note squash has a lot of water in it so reduce amount of broth used.


4 medium sized squash.
cut squash in equal size peices.

In large pot combine squash pieces and 2 10 oz cans of low sodium chicken broth.

At 2 tbs of butter, real butter not margerin
1 tbs of garlic powder

Bring to a boil then reduce heat to a simmer. Scoop squash out of pot and place in a blender or use a imerison blender to cree smooth.

Add 1/2 cup of heavy cream or half and half let simmer and stir to blend the cream in.
