Fresh Strawberry Pie

2-8in pie shells, baked
2 1/2 quarts fresh strawberries
1 cup sugar or a quarter cup (or less depending on brand, I use Pyure) if you use Stevia
2 tablespoons cornstarch
1 cup boiling water
1 (3 oz) package strawberry flavored Jell-O or the same size box in sugar free versions

In a saucepan mix together the sugar and cornstarch; make sure to blend in the cornstarch completely. Add boiling water and cook over medium heat until the mixture thickens. Remove from heat. Add gelatin mix, and stir until smooth. Let mixture cool to room temp.

Place strawberries in baked pie shells. You can cut them however you desire, just make sure it's loaded. Pour the cooled mixture over the strawberries.

Refrigerate until set. Add cool whip if desired.

I thought I had written down how much stevia I used last time but if I did l lost that copy. It's either an eighth of a cup or a quarter of a cup. Depends on how sweet you like it.
