I would say about 10 - 11 am would be a good time; however, some of these aren't compatible with each other. 'Plum Crazy' and 'Turn of the Century' are really difficult to get seeds from. I finally got some, but only a few of my plants would pollinate them. You just have to try and see what happens. I just use a Q-Tip to pollinate mine.
