I've read that it's best to cut them back very short and then pile on the mulch. Some people use a wire cage of the plants and pile the cage full of mulch, but that's not a good look for the garden.

My mom grew them in Phoenix, AZ. She got a lot of bananas, but they'd freeze and die about every 8 to 10 years and she'd have to start over.
