Lori, from what I see in your last imagine is a healthy root system and moss that is in pretty good shape. Having said that let me add further that I do not think that sphagnum moss is the ideal media long term.
As I tell all of my attendees in my orchid growing classes, Phalaenopsis should be repotted every year. With a bark or aliflor based mix, you can often get away with every other year but that is NEVER the case with moss.
Phalaenopsis roots often escape the pot soon after repotting. If you stick to a schedule of repotting once a year, all potential problems arising from the media are greatly reduced. If your Orchid flowers once a year in late winter or early spring, repot it after flowering. You always use a pot that holds the root system, not too small and not with extra room.
Phalaenopsis respond very well to being repotted.
