Toasted Insalata Caprese
I had a great breakfast this morning of fresh tomatoes, sliced fresh mozzarella, and basil. I stacked the tomatoes with basil, a little salt & pepper, and a 1/4-inch slice of fresh (soft) mozzarella cheese. I toasted under the broiler and served each on a slice of toasted Italian bread. It was delicious!

PS--I neglected to say that the tomatoes were Cherokee Purple. Even more flavor!
