Dinner was sheet pan salmon and red wine. We finished the half a bottle of Hot to Trot that we opened yesterday, and cracked "Hellbender", a red that we bought in the Smokies.

I think this is the healthiest dinner that I make: a mix of a can of garbanzo beans, a red pepper and an onion cut in 1 inch chunks, a sliced zucchini, and salmon filets. All are seasoned with a mix of smoked paprika, coriander, and cumin and roasted with avocado oil, topped with fresh mint. Delicious
