Fudge:
You'll need two pots.
In the first pot:
2 cups of sugar
1 small can (5-ounces) of evaporated milk. I use Carnation.
10 (ten) large marshmallows (I tear these apart)
in the 2nd pot:
One small package of chocolate chips (12-ounce)
One cube of butter (1/2 cup) (cut up in pieces)
One tsp of vanilla
Under medium heat, or a touch higher, stir the ingredients until it starts to boil. Let it boil for three minutes, and keep stirring. After three minutes pour the ingredients into the second pot. Stir really really fast to get it all mixed up, then use the beaters to beat until dull in color. Another way to know it's done is if you lightly stick you fingertip (or the tip of a spoon) in the fudge and it keeps its peak, its done. Or if you see the ripples caused by the beaters stay formed while mixing, it's done. Pour out the fudge on wax paper, place in refrigerator to cool. Cut when cool.
This recipe is so good and the texture is so creamy.
The hardest part is combining the two pots because you have to work really fast because the sugar mixture will start to cool down, and harden.
