I picked and cooked some collard several nights ago, with smoked ham hocks in them! Yummy! Pulled some catfish out of the freezer that I'd caught on Thanksgiving Day and fried those up to have with the collards. Talk about some good eating!

And no, no carrots that night, Sharon. I probably eat more raw carrots than cooked, usually grating one up to go in a green salad (lettuce, carrot, black olives, top off with some grated cheese and a pickle on the side). Once or twice a year though I'll gently steam a cut up carrot then smother it in butter, like a carrots-in-a-butter-sauce. Very tasty, and never cook the carrots to the mushy stage!
