That is a gorgeous specimen of Don Juan! I don't grow him but I imagine to encourage repeat blooms you'll want to dead head the spent blooms. You'll want to do clip just above an outward facing bud eye. It will send out a new cane from that eye. I imagine it will still shoot out new canes even if you don't dead head but if you let the flowers form into hips it will think it's time to go dormant.
