Steamed is the way I cook almost all my greens and use these raw too. To me, they are only really good early in the year when they are new and tender. Later on, they do get pretty bitter and I don't pick then. Although a little balsamic vinegar might do the trick at that stage.

I'll have to check out that Paleo diet. Green Grin!
