Your zone is not at all like mine, so what may work for me, may not work for you.
I dip my cut ends in cinnamon before storing, as it is an anti-fungal agent. I do sometimes find mold or fuzz when checking my tubers during their slumber, and I wipe it off with a rag and dunk them again in cinnamon. Hope that helps steer you in the right direction!
