No, TT, not a personal recipe, came out of my local paper. Here it is.
Half an onion(medium), chopped
Half a bell pepper chopped. ( I used yellow)
Deli rotisserie chicken, shredded
Can pinto beans, drained and rinsed
Can black beans, drained and rinsed
Can of cream corn
Half teaspoon garlic powder( I used chopped garlic, about a tablespoon)
5 to 6 cups chicken broth
Can of rotel ( or can of diced tomatoes + a can small green chilies)
One packet taco seasoning
One packet ranch dressing mix
Sauté onion and pepper in one half teaspoon oil in very large pot until soft.
Add all other ingredients, stir well to combine, bring to a boil, turn heat to simmer, cover and simmer 20 to 30 minutes.
That's it! You could use different beans, such as kidney or red.
