Banana Bread

3/4 cup butter
1 1/2 cup sugar (I didn't have enough white sugar so I added raw coconut crystals to equal 1 1/2 cups)
3 ripe banana, mashed
2 large eggs
2 cup flour
2 tsp vanilla
1 tsp. baking soda
1/2 tsp. each salt, cinnamon, nutmeg
1 tsp. lemon zest, the kind in a spice jar
1 cup chopped walnuts

Cream butter and sugar until smooth. Add mashed banana and mix well. Add one egg at a time, mixing well after each. Add vanilla. In separate bowl mix flour with baking soda, salt, cinnamon, nutmeg, and lemon zest. Add slowly to banana mixture. Mix well then add nuts and mix. Pour into 2 loaf pans that have been sprayed with cooking spray. Bake at 350 degrees for 45-50 min or until a toothpick comes out clean when inserted into the middle. (I baked it for 60 min which was too long but it was still delicious.)
