Cuban fried rice with "masas de puerco fritas" here. It's not really anything too fancy. The fried rice is pretty basic stuff, without ginger or much spice. The garlic, onions, and peppers carry most of the flavor. The "masas" are 1" diced pieces of pork that are marinated in sour orange (orange, lemon and lime juices mixed... heavier on the orange) with some onion, oregano, garlic, and salt. Then they get skillet fried and crisped a bit before adding them to the rice mix. My Cuban Dear Other loved it, and went back for seconds in spite of the generous first. A Petite Sirah proved a good pairing.
