Margaret, I don't have a recipe. There's really not much to it. The pork gets chunked (I cut it from pork chops, and save the meaty bones for another meal), and then marinated. Sour orange juice is sold in stores, but I make my own. It's roughly three parts orange juice, and one part lemon juice, one part lime juice. No zest needed (it can bring the bitterness a bit over the top). I have a handheld juicer, but hand squeezed is fine. To that I add some shakes of oregano (or fresh when it's not winter!), a clove or two of crushed garlic, a healthy tablespoon or so of chopped onion, and salt. Overnight is best, but several hours will work. When ready, the pork gets patted dry, dusted with a bit of flour (or not...it's "optional" -- try it both ways), and fried in a good bit of hot oil, in batches if needed to not overcrowd. It'll overcook in a heartbeat. Cook time is quick, maybe two minutes a side. That gets held on the side, you dump some oil out, and then with pre-cooked rice, you make your fried rice. I won't go into that as I'm thinking everyone here has done it. I use a few diced carrots and a mix of peppers. Soy sauce. garlic, and a bit of egg (scrambled in the same pan is fine) are musts. Some do the egg in a separate skillet like a flat egg pancake and then slice it and layer it on. Do that if you're feeling really fancy. The pork gets added in at the end. You can give it a squirt of lime juice to finish, and dress it up with a bit of chopped parsley. Experiment. It won't be awful. Just don't overcook the pork or else it'll be dry. Oh, and leave the veggies with some natural crunch...but that you know.
Anyway, dinner tonight was not what I was thinking it would be. At the Dear Other's request, it was a burger night. (I was going for escargot.) Burger, lettuce, tomato, onion, you know the drill. Half avocado on the side, along with the requisite fries. And Bush's baked beans. Dark Horse red blend.
