Karen's is likely better but here is mine

Breakfast Casserole:
 
1 box (8 servings) frozen hash brown patties
1 stick butter or margarine
2 cups shredded cheddar cheese
12 eggs
1lb of any of the following:  bacon, cooked and crumbled, sausage, cooked and crumbled, ham, chopped 1" chunks (we use Italian Sausage)
Melt stick of butter on bottom of an 11"x13" casserole dish.  Place frozen hash brown patties on top of melted butter.  Break or cut hash brown squares to cover pan.
Beat the 12 eggs.  Pour over hash browns.  Sprinkle meat over eggs and hash browns.  You can use one or more of meat combinations.  Top with cheese and bake at 350 degrees for 40 to 50 minutes.  Makes 10 large servings.
 
You can adjust the recipe to add vegetables.  If the vegetables have much water (mushrooms) it may take longer to bake.
Don't squat with yer spurs on!
