Dinner tonight at my sister's place. She kept it easy and did a new-to-me sheet pan dinner of sorts: tortilla "pizzas." Medium sized tortillas get dressed with a little shredded mozzarella then loaded with one's choice of toppings -- onions, peppers, pepperoni, spinach, mushrooms, tomatoes, pineapple, sparce "red sauce." (Spinach was first sauteed with garlic.) Then set in 350 oven for about 12 minutes, topped with mozzarella and finished in hot oven. Result is nice individual pizzas with thin crusts. Red wine with dinner, after the Guinness start. Great dinner notion.

I'm currently on a bench outside, enjoying the bright moon and a cigar. 67* at this hour. St. Petersburg's temps and clear skies have been a kiss of spring in February for this northener.
