You might want to start out with those frozen bread loaves in the grocery store. No mixing, no kneading. Just thaw, rise and bake. Then when you feel more confident, you can use this dough to make all kinds of other breads. I use it to make jalapeƱo cheese bread. Tip: to turn your oven into a proofer, turn oven to lowest setting, let it come to temp and turn it off. Place a bowl of boiling water on the bottom rack. Place the dough to be proofed on the top rack, and leave oven door open a crack. Check frequently until dough doubles. Punch down, shape into loaves, put in pans, and proof again until double, then bake.
