Made Ginger Cookies this morning and they turned out very well! So much better than bought ginger snaps, which I think are too hard.
This recipe calls for crystalized ginger and molasses and is a keeper. My husband said they tasted like his mom' molasses cookies, but we could definitely taste the ginger in them.
