I went online and looked for a chicken marinade. Found one that I thought was really good when I tried it on some boneless skinless thighs. Today I used it on some chicken breast.
1/2 c. EVOO
1/2 cup balsamic vinegar
1/4 cup soy sauce (I didn't have any)
1/4 cup Worcestershire sauce
2 T. lemon juice
3/4 c. brown sugar
2 tsp. dried rosemary (didn't have any of that either)
2 T. Dijon mustard
2 tsp. salt
1 tsp. black pepper
2 tsp. garlic powder
Mix together. Save out 1/2 cup for brushing on while grilling.
I put the chicken in a ziplock and poured it over, closed bag, and gave it a turn several times in the 2 hours I had it in there. Put on hot grill, brush with reserved marinade.
It was so nice and moist; the best I've made in quite some time. I need to broaden my horizons.
