Hi Rita, Thanks for sharing your idea for a veggie soup.
I like soups, too, and minestrone. I'm not a fan of cold soups. I don't know how eggplant will do in soup.

Your abundance of zucchini and eggplant reminded me of other dishes I like such as eggplant parmesan. I have a similar recipe that uses zucchini. I wonder if the eggplant and zucchini will cook in casserole.

Here is original recipe for zucchini parmesan. I adapted it by adding ground beef, or turkey, sauteed with onion and a homemade, or store bought, pasta sauce with the meat and layered with veggies. I didn't use flour. Now I am hungry!

Here is the zucchini casserole recipe that inspired me!
About the only thing I did from the original recipe is slice zucchini!

I omitted the flour to make it GF!

I used the Prego red pepper and garlic pasta sauce GF

Saute onion, brown turkey, add Italian seasoning and 1/2 jar Prego sauce.
Simmer, then remove meat from skillet if desired.

In the same skillet, saute zucchini.

in casserole dish, put thin layer of pasta sauce on bottom of dish.
Layer 1/2 zucchini, turkey meat, put in oven 350 degrees, 15 mins.

Remove from oven. sprinkle with grated cheese.
Add another layer of zucchini slices. top with remainder of sauce and sprinkle on grated cheese.

Bake 15 mins or until bubbly. Enjoy!

BAKED ZUCCHINI WITH PARMESAN CASSEROLE
10 15 MINUTES 30 MINUTES 45 MINUTES
3 pounds thinly sliced zucchini (sliced into ΒΌ-inch rounds)
4 tablespoons flour
2 cups tomato sauce
1 cup thinly sliced onion
2 tablespoons minced garlic
1 tablespoon roughly chopped fresh oregano
4 tablespoons roughly chopped fresh basil
2 teaspoons salt
3 cups shredded Parmesan cheese
Preheat oven to 375 degrees Fahrenheit.
In a large mixing bowl, combine everything from zucchini to salt. Mix in 1 cup of Parmesan cheese.
Neatly arrange zucchini mixture in a 3-quart casserole dish.
Sprinkle remainder of Parmesan cheese evenly over the top.
Bake uncovered for 30 minutes, or until zucchini is tender and cheese is bubbling and golden brown.

I just read the message which may be confusing. The original recipe was the zucchini with tomato sauce and parmesan. I modified it by adding the meat and layering zucchini and meat in dish!
