Rosie.... your pizza and salad look quite tasty. Do you do delivery or is it take out/dine in only?

Sean....an outstanding and restaurant worthy meal. Looks absolutely delicious.

Margaret.... It has been a little while since I had a good steak and baked potato. Simple and easy meal but always a treat and I'm sure your dinner was quite tasty. Is it my imagination or is beef suddenly cheap now? Thinking

Speaking of cheap, the hubby and I went to the grocery store yesterday. Noticed everything seemed to be very well stocked. Plenty of t.p., paper towels, cleaning products, etc. on the shelves. There was plenty of flour, sugar and other baking items. Meat and seafood were plentiful.

For some reason beef, chicken and pork seemed to be very reasonably priced but dairy (eggs, cheese and butter) a bit on the pricier side as is produce now. Shrug! I honestly believe the panic buying is over as is the hoarding. That is good and I am glad. I do notice, however, that the stores are still limiting how much of certain items you can buy per household and are funny about returns/exchanges right now.

Yesterday's dinner was exceptional. Husband made Thai style boneless skinless chicken thighs. Marinated them in brown sugar, lime juice and zest, lemon juice and zest, cilantro, garlic, fresh ginger, Kosher salt, cumin, lemongrass, coriander, basil, parsley and a Serrano pepper. This pepper gave a nice heat without being overwhelming and the brown sugar gave a hint of sweet. Grilled on high heat the thighs stay moist and juicy inside and crispy-crunchy outside.

He also surprised me by making homemade fried rice. Thumbs up Very easy to do since we had all ingredients on hand. Just scrambled an egg and set aside. Made some plain white Basmati rice to which we added a cup of (defrosted) mixed veggies, soy sauce, and tossed it all in the pan with some sesame oil. A small salad on the side for added crunch rounded out the meal as well as a nice fruit bottle of Hot-to-Trot. Dessert was a little late in the form of fresh pineapple and strawberries sliced and sprinkled with some fresh mint.
