I know what you mean Cindy, but... Oh, I LOVE LOVE LOVE my garlic chives too! Use them fresh and chop and freeze them. In almost every dish I make - salads, eggs, stir fries, veggie dishes, meats, pasta dishes etc. Everyday! And no, I don't let them go to seed. But I do pot and sell/share them with all cooks. Oh, pretty white large chivey flower in Aug.

Nothing like those stiff horrid wild onions that I also can't get rid of.
