Welcome @kristimcafee I think you will enjoy the fall/winter growing season. The weather is far more pleasant with less bugs and other plagues. I am surprised on your crop of bok choi. Mine bolted as soon as it turned hot here. I will be growing it as a winter crop.

I love winter for growing my own lettuce. I prefer romaine lettuce and rarely let it form a head. I harvest the loose leaves only. I have two that have done remarkably well for me. Little Gem Cos Lettuce (Lactuca sativa 'Little Gem') and Parris Island Lettuce (Lactuca sativa 'Parris Island')

In previous winters, I have grown some of the red lettuce. I love the looks of it but do not care for the delicate texture.

Odd to see you mention winter gardening as I was thinking about getting out my seed stash and dig out my fall and winter seeds. It will soon be time to get them started. Hurray!
