Way to use your noodle (intended... Rolling my eyes. Hilarious! ) and your leftovers TT. Next time I'm looking at a fridge full of stuff Ieft over and don't know what to do, I'll think 'soup'.

Today was baked pineapple salmon. It was pretty good. I'm not the world's biggest salmon fan. Love almost all other fish, especially things like trout, perch, etc. I know it is very very good for you. I do not dislike it. It just my least favorite fish. Shrug! Now the husband is insane for the stuff. So we have it every once in a while. Gotta compromise. This was pretty good though.

BAKED PINEAPPLE SALMON

INGREDIENTS:

13-16 pineapple rings; fresh or canned (I used fresh but I think canned would have worked better)
1 large salmon fillet (about 2-2.5 lbs cut into 3-4 equal pieces)
4 Tablespoons melted butter
zest from 1/2 a lime (save over half to cut into wedges and use at serving time)
juice from 1/2 lime
3 Tablespoons freshly chopped cilantro
3 Tablespoons sweet chili sauce
3 cloves garlic; minced
3 Teaspoons freshly grated ginger
2 Teaspoons toasted sesame oil
pinch red pepper flakes
toasted sesame seeds and sliced green onions (green & white parts) for garnish;
serve with lime wedges (from other half of lime) squeeze over just before eating

INSTRUCTIONS

1.) Preheat oven to 350F Line a large rimmed baking pan with foil sprayed with cooking spray or brushed with oil. Skin fish and wash and pat dry.

2.) In the center of the foil lay pineapple slices in an even layer. Reserve juice

3.) Season fish with salt and pepper on both sides. Put on top of pineapple slices

4.) In a small bowl whisk together butter, chili sauce, cilantro, garlic, lime juice and zest, ginger, sesame oil, and red pepper flakes. Brush all over the salmon fillets.

5.) Bake until salmon is cooked through about 15-20 minutes.

6.) Switch oven to broil and then broil for 2 minutes until fish is slightly golden on top. Garnish with sesame seeds and green onions. Serve with lime wedges; squeeze lime over just before eating.

I only had a fresh pineapple and no canned. When I cut it I did not have as many pineapple slices as called for. So I cut the fish into 4 pieces instead of leaving it whole. Worked just fine. I honestly thing canned pineapple would have worked better as the pineapple would have all been the same width and height. Shrug!

Salad left from yesterday and corn on the cob! Hurray! Loved the natural sweetness of the corn in contrast to the salmon. Very good combo. Salad was perfect, cool and crisp. Dinner was good. Wine was Apothic Red.
