Sean...thank you. Yes, it will be a somber day at work for the husband and staff due to Peter's passing. I am sure he will get the full story of what happened exactly to cause the accident. That should help clear up any lingering questions. Also he'll have details for the memorial service. I know he plans on being there.

Also thank you for compliments on enchiladas. Smiling Honestly they are quick, easy and delicious. Yes, I have a 'long version' too but the two of them are barely distinguishable taste wise. The only difference is the hours of work!

Long version starts with chicken you cook and sauce you make from scratch along with tortillas you either buy or make. It is a lot of fun but also a lot of time and work.

Cheater version is buy one Rotisserie chicken and pull off skin. Shred meat and season with a few shakes each cumin, coriander, chili powder and garlic powder. Throw in a small handful of shredded cheese (cheddar and/or Monterey jack) to act as a binder with just a little bit of diced raw white onion. Mix well.
Warm the tortillas (corn or flour depending on your preference) in microwave a few seconds. Pour some El Pato brand enchilada sauce in bottom of your baking dish. Fill and roll each enchilada and put in dish.
Cover with plenty of El Pato and lot of shredded cheese and sprinkle with cilantro. Bake 350F for 20-30 minutes uncovered until cheese is melted and bubbly and insides are hot. Let sit 5 minutes and serve with a sprinkling of diced raw (yes raw) white onion on top. That is authentic! Make your favorite sides to go with.

I love El Pato. I am not one to promote jarred/canned sauces but this is as good as any homemade or restaurant enchilada sauce I have ever had. So I spare myself the hours of work in the kitchen and trying to sub ingredients that just are not available here and just use this stuff. Also have thrown a can in with pot roasts in the crock pot, or poured a little in with tacos when cooking them. Quite tasty. Any well stocked grocery store will have it in either the tomato sauce aisle or the Latin/ethnic foods aisle. If not your local Latin market will have it. One side of the can is in English and the other in Spanish.
