Some other thread here I mentioned how I make-ahead muffin mix and I think someone suggested I put it here, So here goes.

Muffin dry ingredients:
2 cups flour
1/3 cup brown sugar
1 tsp salt
1 TB baking powder

i measure and mix these twice- once in a bowl and once in a container like a 32 ounce yogurt tub.
Heat oven to 400 degrees.

Wet ingredients:

3/4 cup milk
1/2 cup oil
1 egg
1 tsp vanilla

Mix these and add the dry ingredients, stir just to combine.

Add blueberries (about a cup) or chocolate chips (about 2/3 cup). Bake 12 regular muffins for 15 minutes, or six jumbo muffins 20 minutes at 400 degrees.

So-- my yogurt tub with dry ingredients is ready to go, every other time I make muffins. I have the recipe posted on the tub. Best of all, a batch of muffins does Not create the waste of a bag and box every time.
