Sally, this is a salad that my family has prepared for the holidays for many years. Here it is, in this case it turned into 6 cups because I added some fresh Arkansas pecans.
One cup sour cream
One cup mini marshmallows
One cup shredded coconut ( I use sweetened )
One cup canned mandarin oranges
One cup canned pineapple bits in juice
( can add one cup pecans )
Combine all ingredients, making sure that the pineapple and mandarin oranges are throughly drained. I put them in a colander and then pat dry with a paper towel.
It's sweet, but goes well with Turkey, ham, etc and great for larger gatherings where you may be serving folks who don't eat pie. My grandma made a double batch at Thanksgiving because her brother hated pie and would eat this as a dessert. If she didn't make a double batch no one else would get any! I left the remainder at my friends house because her hubbie has a sweet tooth, so now I need to make more. Big Grin
Yesterday is gone. Tomorrow has not yet come. We have only today. Let us begin.
