AG, here is the banana bread recipe as promised.
From The Fanny Farmer Cookbook, Eleventh Edition. It is incredibly easy, and I've simply never had better banana bread than this.
Ingredients
3 ripe bananas (I use 1 or 2 more depending on size)
2 eggs
(I add about 2 tbsp of oil or melted butter for a more tender texture)
2 cups flour
3/4 cup sugar (I use golden brown)
1 teaspoon salt (I use 1/2)
1 teaspoon baking soda
(I add 1 1/2 tsp cinnamon
1/2 cup nut meats, coarsely chopped (I use walnuts and I also add about 1/2 cup of raisins)
How to make it
Mix in a bowl 3 ripe bananas, well mashed, and 2 eggs, beaten until light. (Add oil or butter here)
Sift together 2 cups flour, 3/4 cup sugar, 1 teaspoon salt, and 1 teaspoon baking soda.
Add to the first mixture.
Add 1/2 cup nut meats, chopped. ( Add raisins if using)
Stir well.
Put in a buttered loaf pan 9 by 5 inches. (I use parchment paper and just butter the ends of the pan)
Bake 1 hour at 350 degrees Fahrenheit (176 Celsius).
The bread is delicious served warm, with a butter dish nearby. It makes a nice breakfast quick bread or snack. It keeps well for 2-3 days, and is very nice toasted.
(To make the muffins just fill muffin cups 3/4 full, I got 16 med size, not too big, and baked for about 25 minutes, may take longer if they are larger, always test before removing from oven)
