Sally, congratulations on your and hubby's anniversary. Glad you can celebrate and share happy memories!

I will be interested in hearing how the chicken thighs turn out. I cooked the skin on bone in thighs in the slow cooker when the meat was tender it fell off the bone and left me with a pile of bones. Well, I still have some of the tender tasty meat!

I am thankful I have leftovers for work. Yesterday, I didn't take time to heat the pork stew, snacked on sweets and coffee on the go!

Today one of the organizations is sponsoring lunch. Looks yummy!

I'm trying to restrain from posting the cookie recipes and videos I see on tv.
Though I feel like I can post a recipe or two since they say it is National Cookie Day!
They said cookies originally started with the Dutch as "Little Cakes"!

So I saw a recipe video for making Dutch Apple cakes. They make a cooked apple "fillling", topped with a streusel crumble, sitting on a puff pastry that has been "docked" using a fork to put small "holes" in the puff pastry. I think that keeps the pastry from puffing up and keeps them flatter, more cookie-like and able to hold the apple filling. On TV the recipe looks so simple.
When I read it, it has several steps, maybe too many for me!

When I looked up the apple cookie recipe, I saw a link for a recipe for M&M cookie bars. They say it is the most requested Christmas cookie recipe on Pinterest. This is probably better for me!
Even though I consider the apple cookies to be "healthy" since they have fresh cooked apples!

I probably won't be doing too much baking since daughter did not want me to make the Rice Krispie treats! Didn't want the boys to have the sugar before they went home!

I didn't get much sleep last night, so I must be sitting here day-dreaming with visions of sugar plums dancing in my head! (It's better than thinking about work!)

Yes, I know I can start the New Year resolutions early! That thought is not in my head, yet!
